Mendocino Farms-Inspired Curried Couscous

Inspired by my favorite side dish @mendocinofarms , the Curry Israeli Couscous. Loaded with gently steamed veggies, & @hopefoods Thai Coconut Curry as a store-bought shortcut! This recipe comes together quickly and is quite filling! Ingredients: - 1 Package Israeli (Pearl) Couscous, cooked to package instructions - 2 heaping cups Diced carrots (lightly steamed, you still want a crunch) - 2 heaping cups Cauliflower florets, gently steamed & cut into smaller bite sized pieces - 1/2 Cup Fresh Curly Parsley, plus more for garnish (I prefer curly parsley instead of flat leaf parsley because of the texture. Can also substitute for cilantro).

- Salt to taste Dressing:

- 8oz Container of Coconut Curry Hummus

- Olive Oil, just to help evenly coat veggies & couscous.
