Roasted Butternut Squash Lasagna

Because sometimes you just need pasta! I made this last week for meal prep and I honestly would be making up a recipe bc I don’t remember what went into regarding measurements/ spices 😅
Here’s an ingredient list below for some fall-flavored inspo!
Ingredients:
- 1 Package Lasagna Sheets (I like the flat sheets bc presentation, and the ones with curly ridges at the end are too dense IMO)
- Butternut Squash, roasted
- Balsamic Mushrooms
- Dino Kale (holds up best in the oven)
- Onion fresh & powdered
- Garlic fresh & powdered
- Ricotta (added nutritional yeast, garlic/ onion powder, salt to taste)
Topping:
- Mozzarella
- Parmesan
- Sun Dried Tomatoes in oil
- Crispy Sage
The Sauce:
- Butternut Squash, roasted and blended
- Oat Milk
- Nutritional Yeast
- Garlic & Onion Powder
